I’m in! I decided to register for the Marine Corps Marathon. All my TNT friends are running it so why not? I’m in!

I’m excited to run around all the momuments and national mall. Should be a blast!

Choose your own adventure potatoes

I make these roasted potatoes all year long. I’m going with “Choose your own adventure” from now one, because that’s how I make them.  Whatever’s on hand and whatever cooking method is suitable for the season.

Here we go:

  • 1 pound of poatoes scrubbed and cubed, today I’m usuing teeny-tiny potatoes from Trader Joes, which are the size of my thumb.
  • 1/3 cup olive oil
  • 2 cloves of garlic, minced or pressed
  • 1 tablespoon mixed dried herbs. Rosmary, marjoram, tyme, tarrgon, crushed red pepper pretty much anything goes.
  • salt and pepper
  1. In a small bowl or even a coffee mug, use a fork to whisk together the oil, garlic, dried herbs, salt and peper.
  2. Place cubed potatoes in a large bowl or large zip top bag and oil herb mixture. Toss to coat.
  3. Let them sit for as long as you can to marinate. Sometimes if I plan well they sit over night and are amazing.
  4. Cook them following cooking instructions below.
  5. Poke them with a form to make sure they are done enough.

Oven: Bake a 375 degrees in any baking dish for about an hour. Turning potatoes frequently. They can always go longer and will get crispier.

BBQ: Place in a foil pan in a foil packet on the grill, turning potatoes frequently or flipping packet over for about an hour.


Three Things Thursday

1.I’m not in. Yup. It’s okay though. Although I really wanted NYC to be my first full I know I will get to run it soon. Maybe it’s better that it’s not my first, so I can really enjoy it with out the first full struggle/ nerves. (I guess?) Congratulations to everyone who did get in!     So now the big question is, What should I run instead?

Some full options are:

  • Marine Corp Marathon 10/31
  • Philadelphia 11/21

or I thought about just going crazy and running a bunch of halves. Maybe enough to join Half Fanatics!

I’m seriously thinking about doing Marine Corp though seeing as all my TNT friends have registered allready for it.  It’s on halloween too, which might be very interesting.

Some sick twisted part of my wants to register for the New York Road Runners Knickerbocker 60k in Novemeber.

Um seriorusly where is my sanity?! 60k?? My thought is if I run a full in October or Novemeber might as well tack on some more miles and do it then. Right?

But 60k? Really Lauri? Are you nuts? It’s in central park, 9 times around Central Park!

We’ll see about that later.

2. Last night was beer club. We met at a BYOB Thai resturaunt. Kuma and I have no done BYOB before. It’s great!! The table we sat at  was covered in bottles of homebrew. Simply amazing. There is nothing so great as being in the company of other craft beer lovers and tasting, tasting, tasting. Kuma and have been brain storming different things and haven’t decided on something but I think we will be brewing this weekend. Plus we have a batch of fresh hops ,which we harvested last fall that we really should brew with. Did someone say dry-hopped IPA?

3. This weekend I’ll be doing back to back runs! I’ve never done this before. Here’s the plan:

Saturday: I will be doing a 10 mile training run with the team. Not a race or anything, but still 10 miles is 10 miles.

Sunday: I completly forgot that I signed up to run a 5k with Team Deep Purple (Our Team in Training Alumni team!) I have never run the day after a long run, ever! This will be a first. If I’m feeling good on Sunday I might go crazy and run the whole 3 miles balls out, as put by Kuma. Plus I have a sad 5K time on record of 40:21! Blah!! In my own defense that was first run back last season being broken and not running for a whole month. Um, it was also Thanksgiving morning, so there was some hangover involved. 🙂

Lastly,  I have a present for you! It’s a recipe for my favorite roasted potatoes. I’m going to put it in a separate post here: Roasted Potatoes Enjoy!

15 hours

Just 15 hours until I know if I’m in for NYC 2010.

There are only two things I want this year:

  1. To graduate
  2. To run NYC as my first full

That’s all I want to do this year.

Hopefully tomorrow at 12:15 pm my new office mates will wonder why I’m screaming in excitement.

I’m nervous thinking about the training if I do get in, but the idea of running such an amazing race will get me through it. I know for sure that if/when I get to run NYC it is going to be one of the most amazing experiences of my life. Today I was talking Kristin, a running/ TNT friend, about it. She ran it last year and said it was one of the most up there, amazing life experiences. Right up there with giving birth even according to Kristin.

Tomorrow we will see what happens.

In the mean time, I have developed an absolute obsession with Whole Foods. Last month they opened one 5 minutes away from work. I have always loved Whole Foods. Several years ago I was on a gluten free diet and I used to drive over an hour so I could buy GF goodies! Crazy right?!

So finally, one opened here. Did I mention now I get an hour for lunch now 😉  This might be dangerous.

There is even free Wi-fi too in the store, which is great for the Whole Foods recipe app that I downloaded. I think this is really going to help me with meal planning and shopping for the week. I just select the recipes I want and add them to my list. It totals all the ingredients from all the recipes into one shopping list that I can check off as i find each item. Perfect, I love it! I can’t wait to try it out on my next shopping trip.

Which came in handy today while grocery shopping. I spontaneously decided to make these amazing ricotta meatballs from Elise at Simply Recipes. I’ve made them a million times, but can never remember everything I need. Logged on and shopped off my I-touch! How cool!

After my shopping adventure I came home and made my own ricotta. It seems like something so difficult, but if you can boil water you can make ricotta. I promise. It’s so worth it. One pet peeve about commercial ricotta is how wet it is. Soggy lasagna is what I end up with. This is drier and it crumbles right into whatever you are making, or your mouth if your Kuma or I.  Here’s the secret from David Lebovitz, on Simply Recipes.

Lastly, I realized how many races I have coming up in the next 2 months!! 3 5Ks and 2 half marathons! I’m thinking about getting myself a running skirt to wear for them. The adorable twins at  Running Skirts.com has so many cute ones, with compression shorts underneath (to avoid thunder thigh chafe). Plus they have pockets on each side. I love running clothes with pockets, between carrying my inhaler and shotbloks I need them!! Wait packs just are not an option for me!!

I just cannot decide which skirt to get! Besides wanting all of them I’m trying to decide between the beautiful floral print or the black mini dot skirt. Plus all the cute compression socks they have. Kuma is going to kill me for buying more running clothes :\

Which one should I get??

Hope everyone had a great spring holiday!

Sorry for the lack of posting, it’s been super crazy around here lately though. Kuma and I both started new jobs this week. Lucky for us things are finally looking up and we now have better jobs, with better paychecks and benefits. What a relief!

My new job is a new position in the hospital where I work. I’m now in the surgical oncology department doing administrative work there. It’s such a change from working in the gift shop. When I was there I did mostly billing and purchase orders, but I was constantly interrupted and if very little got done during the day, well it was no surprise. My new office is so quiet comparatively.  No interruptions here. One very cool thing is that my office overlooks the heli-pad of the ER, where the air lifts happen. Thursday I heard that helicopter and went flying over to the window to watch! They told me it never gets old. It was not what I thought it would be. Absolutely not like on television. No crazy running. Very controlled. Odd. I was told that they do run sometimes, I guess it just depends on the case.

Yesterday Tina and I hosted a “Bunny” run with our team mates. What a blast! I ran 8 miles wearing bunny ears in gorgeous weather. Somehow no one took a picture! What a beautiful day! The best part I’ve felt amazing since my run. I ran faster than I’ve been and I was not a wobbling painful mess after or today. Fantastic!

Three Things Thursday: The Early Edition

I am still debating the 13.1 New York which is 10 days away and I need to register in the next two days (or the price increases) Help me out people!! Should I do it our not? I slated for a 7 miler this Sat, I’m sure I can swing 13.1 right?

Also I am going to be doing Mel at Tall Mom on the Run’s Virtual 10k this Saturday! Well it will be 7 miles for me. You can get in on this action too, all for a great cause of course! 1. I have had the most off running week. Monday I ate something and have had mild yet annoying food poisoning this whole week so for. So I didn’t run Monday or Tuesday. Tonight I ran and I felt so lousy still. I ended up walking 4 miles around and around the track with Magdaly. Tomorrow we are going to CATZ which is an athletic training program to help build your endurance and stamina. I hear great things and hopefully it will do wonders for my core and give me the butt kicking I need! Just such an off week.

2. Three friends and family had/ have surgery this week! Yesterday my Dad had surgery to correct hammer toes that he has. He now has pins in each of his toes to help hold the bones in place until the heal correctly. He needed it though, the past few weeks he’s been barely able to walk. So even though he’s a mess now, he’ll be better soon.

3. I registered for the New York Road Runner’s Brooklyn Half marathon two days ago! I’m so excited!!! I had checked their site to see the date and lucky for me, I checked. They had posted an announcement that the race was almost full and they were closing registration that night! So I entered ASAP and made it in with Magdaly! I cannot wait to run through Brooklyn. I love it there. There is not too much I know about the course except it starts in Prospect park and ends in Coney Island. Just for the record Magdaly and I plan on a ride on the Cyclone and a hotdog 🙂 Did I mention it’s the day after my college graduation? 🙂  🙂 Double Smiles!

Happy Spring!

Saturday, we had amazing warm weather for our run! So warm in fact, I had to duck into a bush to pull off my long sleeve Under Armor I had under my tee shirt! Totally overdressed.

One thing I always wear on my runs are Bondi Bands! My mom bought me my first one in Disney at the Half this year. These things are *amazing*! I have about six of them, which I adore so much!!

I have all sorts of crazy fly aways around my face (AKA my bird feathers) that stick to my face and get in my eyes when I run. Bondi Bands keep them out of my face and the sweat from dripping into my eyes. These things are no slip no drip according to the website and it’s the truth!

During the chilly runs I generally pull mine over my ears for the perfect amount of warmth while maintaining my hearing abilities. Believe it or not during the downpour run last week even though it was soaked it kept the drips from dripping into my face. They are also great to wear while  I’m cleaning the house, and honestly they make me feel more badass while cleaning. Enough stories….
